For this recipe, you'll need:  

  • Cleaned leeks 
  • A mixture of capers and lemon juice
  • Green beans 
  • Fennel fronds 
  • Lemon
  • Chopped parsley and mint
  • Butter
  • 2 six-ounce salmon fillets

Preparation 
1. Preheat the Oven: 
  • Start by preheating your oven to 400 degrees on convection bake. 
2.Build the Base: 
  • Begin by placing fennel fronds at the bottom of the pan. 
  • Add raw green beans on top of the fennel. 
  • Add leeks, which provide great flavor and versatility. 
3. Add the Salmon: 
  • Nestle the salmon fillets on top of the vegetables.
  • No need for salt or pepper because the caper juice in the poaching liquid already has plenty of salt.

Checking and Serving 
8. Check the Salmon: 
  • After 20 minutes, check the salmon. It should be cooked through with poached vegetables. 
9. Plating: 
  • Plate the green beans and leeks first. 
  • Add the poached salmon on top.
  • Drizzle with the light butter sauce and garnish with edible flowers if desired.
