  • 3 large eggs
  • ½ cup all-purpose flour
  • ½ cup whole milk
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 2 tablespoons salted butter, plus more for serving

Instructions

Step 1

Place a 10-inch cast iron skillet in the oven on the center rack and preheat to 425°F.

Step 2

Combine eggs, flour, milk, vanilla, and salt in a blender. Blend until smooth, about 1–2 minutes. You can use a hand or standard mixer; be sure to mix for longer to ensure a smooth batter. 

Step 3

Carefully remove the hot skillet from the oven, add butter, and return it to the oven until the butter is melted and bubbling.

Step 4

Pour the batter into the skillet and bake until puffed and golden, 20–25 minutes.

Step 5

Serve immediately, while the edges are crisp and the center is soft.
