Most freestanding ranges are sold on total output, and total output is the least useful number on the spec sheet. What determines how a range actually cooks is where that power is. How low the lowest burner goes, how quickly the highest one recovers, and whether both of those capabilities live in the same position. On a conventional cooktop, they don't. One burner sears. One simmers. The rest land somewhere in the middle, and the cook adapts.

DuoPro™ was engineered to eliminate that limitation. Every burner is a dual-function, dual-ring brass burner that runs from an 800 BTU simmer to a 25,000 BTU sear. Let’s take a deeper look at what makes DuoPro™ stand out.

Brass, and why it still matters

Brass conducts heat evenly and holds its shape at temperatures that soften and deform lesser metals. That combination is why professional kitchens have relied on brass burners for decades, long after cheaper alternatives became available. Aluminum burners lose their edges over time, and when a burner loses its edges, it also loses its flame pattern.

DuoPro™ burners are hand-forged in Italy. Over years of use, the brass develops a patina through natural oxidation—a deeper, warmer hue that protects the surface against corrosion rather than signaling wear. The burner you cook on in year 10 produces the same flame it produced from the very first use.

The dual-ring construction is what makes each burner genuinely flexible. An inner crown and an outer ring draw from separate ports, so a single burner covers the entire span of heat instead of dividing that work across two positions on the cooktop.

The case for a true simmer

Most ranges bottom out well above a real simmer. That remaining heat is still enough to break a hollandaise or scorch chocolate partway through a slow melt, which is why so much delicate cooking gets moved off the burner and into a double boiler or a bowl of warm water.

A true 800 BTU simmer changes the arithmetic. It holds a risotto at a bare bubble for as long as the rice needs. It tempers eggs without curdling them. It lets a braise sit for three hours without scorching the bottom of the pot.

Modulation, and even dispersion

On most cooktops, the flame steps down in noticeable increments. Cooks compensate by overshooting in one direction and then correcting past the mark in the other, adjusting the knob repeatedly until something close to the right temperature holds. DuoPro™ moves through its range gradually enough to settle a sauce exactly where it belongs and leave it there.

Dispersion matters just as much as modulation. Heat that reaches the outer edges of a pan, rather than pooling under the center, means a 12-inch skillet browns uniformly across the whole surface. Nothing needs rotating halfway through. Onions in a pan go translucent at the same rate from edge to edge, and a group of scallops comes off the heat looking like a complete batch rather than a sequence.

Every position is the best position

Anyone who cooks for a crowd knows the front-right or front-left burners are prime real estate. On a conventional range, the entire menu gets planned around burner geography—which position can handle the searing, which one can be trusted with a sauce, and which one is only useful for holding something already finished. Timing bends around the cooktop instead of the food.

Remove that constraint and the sequencing loosens. Holiday cooking gets simpler because four dishes can demand real heat at the same time. Weeknight dinners get faster because nothing waits for the right burner to open up. Pans stop migrating across the surface mid-recipe. The range stops dictating how the kitchen works.
